Blue
Cheese Tarts
6 oz. cream
cheese, softened
4 oz. blue cheese,
crumbled
2 eggs
¾ t. Worcestershire
sauce (yeah, we use vegetarian)
Salt and pepper
to taste
Fresh chives
Package of puff
pastry, thawed
Preheat oven to 350 degrees.
In food processor bowl,
combine cheeses, ONE egg, Worcestershire sauce, salt and pepper.
Process until smooth.
Line cookie sheets with
parchment paper. Cut pastry into squares (I cut each sheet into
nine squares, but they would make better finger food cut smaller
than that). Put a heaping teaspoon of filling onto center of each
square. Add fresh chives to garnish (if desired). Beat second egg
lightly in a small bowl. Fold diagonal corners of pastry squares
together to meet in center, using egg wash to help hold them together.
Brush all tarts with egg wash and bake for 15 minutes or until golden
brown. Ideally, serve these hot (but they’re still pretty
tasty at room temp!)
