Lamb Chops with Maytag and Walnuts

18 thinly sliced rib lamb chops (cheaper than loin)
4 oz. blue cheese, softened (I used Maytag)
2 tablespoons butter, softened
1 clove garlic, crushed
2 tablespoons finely chopped walnuts
2 tablespoons parlsey

Combine Blue Cheese, butter, garlic, parlsey and walnuts in a bowl.

Make some cuts in the fat of the lamb so the chips don't curl when cooked. Grill lamb chops quickly on both sides or use a grill pan. Place on a baking sheet and add a dollop of blue cheese mixture to each chop. Heat in a hot oven until cheese is melted. Both chops and blue cheese mixture can be made ahead of time. Assemble right before heating.
