Insalata Capresse
Just a fancy name for a delicious, composed salad of fresh mozzarella, basil and tomatoes. Don't bother making this unless your tomatoes are at the peak of the season.

Tomatoes
Fresh mozzarella
Basil
Extra virgin olive oil
Balsamic vinegar

Slice tomatoes. Slice mozzarella into about the same size as your tomato slice. Find a nice white plate and start with a tomato slice followed by a mozzarella slice. Continue until your plate is filled with alternating slices of cheese and tomato. Now, tuck a whole basil leaf between each cheese slice and tomato slice. Make sure the red, white and green all show for a pretty effect. Then drizzle lightly with olive oil and balsamic vinegar. Season with salt and pepper.

If you like you can also sprinkle with red pepper flakes. Best eaten and made immediately but it will still be good made ahead and kept in the fridge for an hour or 2.
