Tie Pasta with Tomatoes and Basil
My daughter Kate likes this and she doesn't even eat tomatoes.
It is another no brainer. No cooking required except for the pasta.

Pasta
Several firm ripe summer tomatoes (can be made with grape tomotoes)
4-5 basil leaves, thinly sliced - How
to Chiffonade
1/4 grated Reggiano Parmesan or any good quality parmesan
Large ball of fresh mozzarella (Optional)
Chop tomatoes.
Roll basil leaves up like a cigar and then slice into thin shreds.
Toss tomatoes and basil together. If using, cube mozzrella.
Cook pasta according
to package directions. Place in a serving dish. Add tomato and basil
(and mozzarella, if using) and toss. Sprinkle with parmesan and
toss again. Eat immediately. Serve with additional parmesan on the
side.
