TIP:
To peel whole garlic easily, lay it on the cutting board and place a wide knife blade on top, like a chef's knife. Hit blade of knife with the palm of your hand to lightly crush garlic. Garlic peel should

Welcome to my first newsletter. Please feel free to pass this on to friends. Enjoy these recipes involving my summer favorite, basil.

Basil

Nothing in the summer is more satisfying to me than going out to my pots of herbs and cutting some basil! If you didn't plant basil this year you can buy packages of fresh basil at the grocery store or look for fresh cut bunches sold at Soulard, Clayton Farmers Market or the Kirkwood market or hit up a friend who planted some. If they are like me they have more than they can use right now!

Here are some of my favorite summer recipes using basil. Since it is one of the culinary world's perfect pairs most include summer tomatoes. Make sure you use the best summer tomatoes you can find. In the winter most of these recipes can be made with either good plum tomatoes or grape tomatoes but nothing tops the taste when these ingredients are at their summer best.

Grilled Chicken with Basil Butter - Recipe
This is a very easy summer dish. Forget about calories and use real butter for this.

Insalata Capresse
Just a fancy name for a delicious, composed salad of fresh mozzarella, basil and tomatoes. Don't bother making this unless your tomatoes are at the peak of the season. - Recipe

Bow Tie Pasta with Tomatoes and Basil - Recipe
My daughter Kate likes this, and she doesn't even eat tomatoes. It is another no- brainer. No cooking required except for the pasta.

Tomato Basil Bruschetta - Recipe
Almost anything put on a piece of toasted bread is considered bruschetta. Bruschetta is an easy summer appetizer when the grill is already fired up. Here is one of my favorite version.
