Corn on the Cob with Garlic Butter,
Fresh Lime and Parmesan Cheese

8 ears corn
4 fresh limes -- quartered
1/2 cup grated parmesan cheese -- best quality you want to buy
Garlic
Butter:
2 sticks unsalted butter -- slightly softened
8 cloves garlic -- peeled and coarsely chopped
Salt and freshly ground pepper
Make garlic
butter: Combine butter and garlic in a food processor and process
until smooth. Season with salt and pepper. Set aside until ready
to use.
Clean corn.
Cook corn until almost done. Place
corn on hot grill until slightly charred. This will make it sweeter.
Remove from grill. Brush
with the garlic butter. Sprinkle with the Parmesan cheese and squeeze
with lime. Serve.
